			<content:encoded><![CDATA[<p>Anyone on a voyage of discovery through Germany and at the same time sticking to the list of UNESCO World Heritage Sites will on the one hand be travelling for a long time – there are after all 48 recognised sites – and on the other hand they will discover that behind each destination are hidden some quite varied places. Alongside the tourist interest that comes with the distinction there are, however, also obligations, such as keeping up the care of the ‘object’.</p>

<div>The <strong>old town of Bamberg</strong> has been a World Heritage Site since 1993. The town provides a unique representation of a Central European town built on a basic structure dating back to the early Middle Ages. Like Rome, Bamberg was also built on seven hills and is therefore also known as ‘Franconian Rome’. The old town was spared major damage through wars and disasters and is today an impressive complete work of art between strict Gothic and middle-class Baroque. In 2012, the ‘Landesgartenschau‘ national horticultural show will take place on the site of a former cotton spinning mill, with the theme of ‘materials and fabrics’ running as a common thread throughout the exhibition. In addition to the ‘programme of must-see sites’ such as the Kaiserdom and the Residenz, you shouldn’t miss, for example, the small museum in the house in which Levi Strauss was born.<br />
Equally steeped in tradition is the <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelWeinhausMesserschmitt/tabid/230/Default.aspx" target="_blank">Romantik Hotel Weinhaus Messerschmitt</a>. The hotel’s history dates back to 1422, and wine was being served here as far back as 1832. Enjoy seasonally-inspired dishes in the restaurant &#8211; in addition to fresh fish from the river Main, there are also game dishes from the local hunt on the menu.</p>
<p>Weimar has a double ‘World Heritage Site’ boast. First of all there is the so-called ‘<strong>Classical</strong> <strong>Weimar</strong>’, which first and foremost recognises ‘the predominant role of Weimar as a spiritual centre in the late 18th and early 19th centuries’. Take a stroll in the footsteps of Johann Wolfgang Goethe, Johann Gottfried Herder and Friedrich Schiller. A well put together, informative and at the same time entertaining guided tour of the city ensures it’s all far more interesting than it was in history and German lessons at school …<br />
The <strong>Bauhaus and its sites in Weimar and Dessau</strong> have also been World Heritage Sites since 1996. Walter Gropius founded the State Bauhaus in 1919 as an art school in Weimar. Even today, the style and ideas continue to have a strong influence on architecture in particular.<br />
The <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelDorotheenhofWeimar/tabid/170/Default.aspx" target="_blank">Romantik Hotel Dorotheenhof Weimar</a> is located in an idyllic park a little outside the town and is in many ways closely bound to Weimar’s artistic side. In addition to a small gallery displaying a changing array of exhibitions, the hotel garden from May to September becomes the showcase for ‘Sculpture.Weimar’ featuring exceptional sculptures by contemporary artists.</p>
<p>Thanks to a <strong>historically constructed heart to the town</strong> which extends across more than 80 hectares, <strong>Quedlinburg</strong> is one of the largest heritage areas in Germany. The enclosed heart of the town which dates back to the Middle Ages documents more than six centuries of half-timbered construction. Masterpieces of the Romantic period include the St. Servatius collegiate church with the graves of the first German King Heinrich I and his wife Mathilde along with the splendid cathedral treasury.<br />
In the half-timbered building of a former distillery which is today a protected monument and the adjoining Whilhelminian palace – within walking distance of the mediaeval town centre – is the <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelamBruehl/tabid/78/Default.aspx" target="_blank">Romantik Hotel am Brühl</a>. During the summer, you can enjoy breakfast or some sustenance between meals in the large, leafy inner courtyard.</p>
<p>The <strong>Völklinger Hütte</strong> in Saarland in 1994 became the world’s first industrial monument to be raised to the status of World Heritage Site. This former ironworks ceased production in 1986. As far back as the 19th century, the ‘Röchling’schen Eisen- und Stahlwerke’ was Germany&#8217;s largest manufacturer of iron girders. As well as an exciting tour over more than 5 km, the site invites visitors to a range of cultural events and exhibitions (for example ‘Asterix and the Celts’ which is taking place through to 9 April 2012).<br />
A 20-minute drive away awaits the <a href="http://www.romantikhotels.com/Hotels/RomantikHotelLinslerhof/tabid/486/Default.aspx" target="_blank">Romantik Hotel Linslerhof</a> in Überherrn. The estate first appeared on official deeds back in 1154. Today, the large site impresses primarily with its exceptional range of services: in addition to stalls for livery horses there is, for example, a school of hunting and a highly modern underground shooting complex. A comprehensive programme of events also ensures a rich diversity.</p>
<p>In 2009, the <strong>German Wadden Sea</strong> was added to the world heritage list as the largest Wadden Sea in the world, putting it on a par with natural wonders such as the Great Barrier Reef in Australia. The area alongside the North Sea coast of Germany, measuring approximately 450 kilometres long and up to 40 kilometres wide, is flooded with water twice a day creating a quite exceptional and varied environment for animals and plants. A total of some 10,000 different species are supported here. The effects of water and wind mean the landscape is subject to constant changes and is exceptionally dynamic. The Wadden Sea also has a cultural past, with men constructing dikes and using the area predominantly for ‘nourishment’ and recuperation. A holiday by the Wadden Sea means long walks or bicycle rides in the fresh air (with a healing effect on skin and lung diseases) and observing animals.<br />
The island of Juist lies in the Lower Saxon Wadden Sea and is the longest island in East Frisia. One natural feature is the ‘Hammersee’, the largest freshwater lake on a North Sea island which provides an important source of food and resting area for insects and birds. Here on the island, the <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelAchterdiek/tabid/71/Default.aspx" target="_blank">Romantik Hotel Achterdiek</a> is ready to welcome you. The hotel, which takes all its electricity from renewable energy, appears perfectly integrated in its environment. Take a seat in the hallway with its open fire, reminiscent of a typical East Frisian living room and chat with your host over the weekly ‘catch-up’ accompanied by sparkling wine.<br />
Just three kilometres from the coast, on the East Frisian mainland, the <a href="http://www.romantikhotels.com/Norden" target="_blank">Romantik Hotel Reichshof</a> in Norden looks forward to your visit. The hotel’s history began as a brewery, with the former Doornkaat granary being added at a later stage. But don’t worry, East Frisian tea also promises excellent indulgence within these walls.<br />
Amrum is one of the North Frisian islands and is just outside of the Wadden Sea. The old school house was turned into what is today the <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelH%C3%BCttmann/tabid/186/Default.aspx" target="_blank">Romantik Hotel Hüttmann</a> at the end of the 19th century. Whether it’s a special benefits menu which is currently raising money to restore the historical gravestones in the old cemetery in Nebel or the ‘Amrum Sand and Oil Massage’, the hotel’s range of services provides constant reference to its geographical location.<br />
Sylt is the largest of the North Sea islands. The island’s widespread elitist image does not do justice to its variety. Countless high-profile cultural and sporting events, a (health) tourism industry that’s steeped in tradition and a past that can be traced back to the Stone Age attract a broad spectrum of travellers. The <a href="http://www.romantikhotels.com/Hotels/HotelsRomantikHotelBenenDikenHof/tabid/82/Default.aspx" target="_blank">Romantik Hotel Benen-Diken-Hof</a> in Keitum sees itself as an ‘island on an island’. The ‘Artisan Menu’ provides a quite exceptional experience for all the senses. The exquisite array of dishes created by head chef Julien Dherbecourt, which is constantly adapted to suit the seasons, is complemented by exclusive creations by artisans from Sylt which adorn the table. These include a hand-woven tablecloth, mouth-blown glasses and specially forged napkin rings.</p>

<p>Whether you want to impress friends and family with food for a winter’s night or for Christmas, or simply to treat yourself, winter is just the time of year to indulge yourself.</p>
<p>Head chef Stefan Danzer of the <strong><a href="http://www.romantikhotels.com/Juist" target="_blank">Romantik Hotel Achterdiek</a></strong> on the island of Juist has prepared a Christmas dessert recipe for us:</p>
<p><span style="text-decoration:underline;"><strong>Cinnamon mousse with spiced oranges and crispy waffles</strong></span></p>

<p><strong>Spiced oranges</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>5 oranges</li>
<li>100 ml orange juice</li>
<li>200 g sugar</li>
<li>150 ml white wine</li>
<li>60 g starch</li>
<li>Star anis</li>
<li>Allspice</li>
<li>Bay leaf</li>
<li>Cloves</li>
<li>Cinnamon stick</li>
<li>Coriander</li>
</ul>
<p><strong>Method:</strong><br />
Caramelise the sugar in the pan and quench with white wine. Add the orange juice and spices and cook over a gentle heat for around 10 minutes. Beat the starch and white wine to from a smooth paste and stir while simmering to reach the right consistency.</p>
<p><strong>Cinnamon mousse</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 egg yolks</li>
<li>75 ml milk</li>
<li>1 small pinch of cinnamon</li>
<li>60 g sugar</li>
<li>35 g white chocolate coating</li>
<li>1.5 sheets of gelatine</li>
<li>175 g whipped cream</li>
<li>25 ml Amaretto</li>
</ul>
<p><strong>Method:</strong><br />
Whip the cream and set aside to chill, leave the gelatine to soak in cold water. Cut the chocolate coating into small pieces. Beat the egg yolks, milk, sugar, ground cinnamon and Amaretto in a mixing bowl over a pan of water until it forms peaks (approx. 83 °C). Add the soaked and pressed gelatine to the warm mixture and stir in the finely chopped chocolate coating. Next beat the mixture until it cools (e.g. in iced water). Finally, carefully stir in the whipped cream.</p>
<p><strong>Crispy waffles</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>25 g flour</li>
<li>25 g Icing sugar</li>
<li>25 g butter</li>
<li>25 g egg white</li>
</ul>
<p><strong>Method:</strong><br />
Mix the icing sugar with the egg white. Briefly melt the butter in the microwave and add to the icing sugar and egg white. Finally stir in the flour. Leave the mixture to rest in the fridge for around 15 minutes. Now spread the chilled mixture very thinly onto baking paper or create the shape you want using a baking dish. Bake at 1800C for 6–8 until golden-brow.</p>

			<content:encoded><![CDATA[<p>While the first sight of Christmas crackers on the supermarket shelves may leave us cringing to ourselves, it’s all part of the traditional build-up. The shops are selling brightly-coloured baubles and Christmas lights, the shop windows are decorated with toys designed to tempt kiddies’ eyes and the first Christmas markets open in this month. We have put together a few tips for pre-Christmas short breaks for you.</p>
<p>In <strong>Engelskirchen</strong> in the Bergisches Land, the Deutsche Post opens a Christmas post office every Christmas. 150,000 wish lists from 59 different countries were received last year, with replies coming from 20 helpers, so-called &#8220;post angels&#8221;. And this all came about rather by coincidence: in 1985 the first letters &#8220;To Father Christmas&#8221; were received, and because there is no fixed address in North-Rhine Westphalia, they were forwarded to Engelskirchen. There was a manager here who replied to the letters, to spare the children from being disappointed. And at Christmas only, the Christmas post office is opened to the public, providing a glimpse behind the heavenly curtains.</p>

A museum provides insights into the time of the song’s origins and looks at how the title spread. &#8220;Silent Night&#8221; is deservedly the most famous Christmas song and has been translated into more than 330 different languages and dialects.</p>

The kitchen crew focuses entirely on tried and tested recipes leaving guests to indulge in stuffed breast of veal, roast venison with herbs, crispy pork suckling and the ever-popular goose. The Kunsthistorisches Museum in Vienna has agreed to lend an outstanding selection of 54 paintings to boost the already impressive collection of Bruges&#8217;s Groeningemuseum. The works all date from the 15th and 16th centuries and originate from the southern Netherlands. The masterpieces from Austria make it possible to bring together old masters like Jan Van Eyck, Hugo van der Goes, Jan Gossaert, Jerome Bosch and Pierre Bruegel.</p>

<p>The construction work which has been part of the <strong><a href="http://www.romantikhotels.com/Schmallenberg" target="_blank">Romantik Hotel Deimann</a></strong> throughout the spring and summer is largely completed. In the &#8220;Alte Saegerei&#8221; wing of the building, the guest rooms radiate new splendour and now offer even greater comfort and ambience. For à-la-carte meals, guests can now choose between two restaurants: while international, creative cuisine is served in the winter garden, in the &#8220;pub&#8221; restaurant there are traditional, regional dishes on the menu. Next to the pub there is now also a large, modern bar where guests can finish the day over international drinks, exclusive wines and Sauerland beer.</p>

The justification states: &#8220;The 104-year-old Berghotel Muottas Muragl demonstrates that high quality hotel comfort and PlusEnergy construction can be achieved even at 2,456 m above sea level.&#8221; The hotel is the first PlusEnergy hotel in the Alps and has energy self-supply of 105%. Its success cannot be over-estimated since at this height, it can sometimes get icily cold. This means that the average temperature over the year is minus one degree Celsius. However day-trippers and hotel guests at Switzerland’s second most sunny spot happily hardly notice – thanks to geothermal energy, solar panels and a photovoltaic complex.</p>
<p><strong>Romantik Hotel Regina proposes special programme</strong></p>

<p>The <strong><a href="http://www.romantikhotels.com/San-Martino" target="_blank">Romantik Hotel Regina</a></strong> in San Martino die Castrozza has thought up something rather special for this winter: a total of 14 weeks will be devoted to special themes, making a stay at precisely this time a genuinely unique experience. For example 22 to 29 January 2012 will be all about the Slow Food concept. Every day, a traditional dish will feature on the à-la-carte menu and will be presented along with its history and the recipe. On one evening, the dessert buffet will be dedicated entirely to the apple, an essential element of the culinary culture in the Alps. During the afternoons, visits to local manufacturers, for example a butcher and a honey and jams producer are on the programme. From 5 to 12 February 2012, hotel guests will take a journey back in time. Inspired by the frescoes in the Eagle Tower in Trient which dates back to the end of the 13th century, there will be spectacles such as knights and ladies having &#8220;snowball battles&#8221; and, for example, culinary delights from the Middle Ages and the Renaissance will be served. The ambience is created in line with the period and guests will also have the opportunity to transform themselves into fair damsels and brave knights. From 11 to 18 March 2012, the programme will focus on &#8220;Artesella&#8221;, an open-air exhibition in the midst of the woods and meadows of Valle Sella. It was first held in 1986, and natural effects such as leaves, snow, light and shadow create quite exceptional impressions which can vary from day to day, even from hour to hour. The Romantik Hotel Regina is organising an unforgettable day trip and, on request, is also offering visits to local artists.</p>

<p>For the past two years, a rare delicacy has featured on the menu of the <strong><a href="http://www.romantikhotels.com/Volkach" target="_blank">Romantik Hotel Zur Schwane</a></strong> in Volkach: Franconian &#8220;slate truffle&#8221;.</p>
<p>These are not true truffles but a separate species that can be found under weathered slate and in special biotopes between June and September. The search is difficult, requires a great deal of experience and a good eye.</p>

<p>The &#8220;slate truffle&#8221; is blackish-brown to dark olive, with a bright yellow structure on the inside; its shape is reminiscent of Périgord truffles. It has an intensive aroma, but this only develops in very hot conditions.</p>
<p>If all this makes your mouth water, you should visit the Romantik Hotel Zur Schwane and order one of the &#8216;slate truffle&#8217; dishes on the menu. You can also try the following Franconian regional recipes, as provided by chef Klaus Dill and his team:</p>
<p><span id="more-1793"></span></p>
<p><span style="text-decoration:underline;"><strong>Seasoned cheese tart (Obatzter)</strong></span></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>125 g Brie or Camembert</li>
<li>40 g cream cheese (Philadelphia, etc.)</li>
<li>50 g butter</li>
<li>1/2 teaspoon sweet paprika</li>
<li>a pinch of salt</li>
<li>a pinch of pepper</li>
<li>a little white wine or beer</li>
<li>some chopped onion</li>
<li>some caraway seeds</li>
<li>1 slice of pumpernickel (approx. 50 g)</li>
<li>20 g butter</li>
<li>5 grapes, seedless</li>
<li>1 sprig of chervil</li>
</ul>
<p><strong>Method:</strong><br />
Mix cheese and butter with a fork at room temperature.<br />
Season with paprika, salt and pepper. Add a little white wine or beer.<br />
Add chopped onion and cumin according to taste.<br />
If the onions have a strong smell, briefly simmer them in boiling water, drain and add.<br />
Crumble pumpernickel and mix with butter.<br />
Use this mass as a base in a 10 cm ring-shaped mould and press down to a height of about 5 mm.<br />
Add the cheese and smoothen the top.<br />
Chill until the cheese has set, then cut into 8 slices.<br />
Garnish with half a grape and chervil.<br />
Serve at room temperature!</p>
<p><span style="text-decoration:underline;"><strong>Red onion marmalade</strong></span></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>3 red onions</li>
<li>100 ml red wine</li>
<li>25 ml creme de cassis</li>
<li>1 small sprig of thyme</li>
<li>1 small clove of garlic</li>
<li>a little starch for binding</li>
<li>salt</li>
<li>pepper</li>
</ul>
<p><strong>Method:</strong><br />
Can be prepared a day in advance!<br />
Peel onions and chop finely. In the meantime, heat red wine and cassis and allow to simmer for some time. Lightly press the garlic clove with the back of your hand, then add to the reduction along with the thyme. Once the reduction contains only about 50 ml, bind slightly with starch dissolved in a little liquid.<br />
Lightly sauté the onions in a pan, add the reduction, season with salt and pepper and allow to simmer for another 3 minutes. Remove from stove and allow to rest overnight.</p>

Homegrown products such as grapes, oranges, almonds and olives and the region&#8217;s black pigs are turned into delicatessen highly prized by gourmets from all over the world. Not only gourmets will have fun discovering the island in search of these delicious products. We have compiled a few interesting starting points for you.</p>

<p>Vineyards have long been a successful tradition on Majorca. Even the Romans praised the &#8220;vins balearics&#8221;, which were exported to the Roman Empire in large amounts. Viticulture specially flourished in the central <strong>wine-growing area of Binissalem</strong> among the Moors, who recognised the potential of the soil, rainfall and microclimate in this region as constituting prime conditions. Viticulture suffered a set-back in the late 19th century due to a vine fretter plague, but today we once again distinguish between three wine-growing areas, in which winemakers manage to find the right balance between tradition and modern technology to produce extraordinary results.</p>

<p>There are other alcoholic drinks to be discovered on Majorca, too: <strong>Bunyola</strong> is well-known for its Palo, a bitter liqueur made from carob. A small distillery in <strong>Pont d’Inca</strong> produces an extraordinarily good brandy, which can hold its weight against mild cognacs.</p>
<p>The contemplative little village of <strong>llubi</strong>, with its narrow lanes and small houses, lies in the north of Majorca&#8217;s great plain. It was probably the Carthagians who first imported capers here and today these slightly sour delicacies are still a major product in this region.</p>
<p>The little village of <strong>Caimari</strong> lies at the foot of the Tramuntana Mountains, surrounded by olive groves. This region is famous for its cold-pressed olive oil. During the olive festival in November, the old oil mill, which is driven with the aid of a donkey, is set in motion &#8211; an impressive reminder of times past. Allow yourself to be introduced to the secrets of production, so that you will prize this &#8216;liquid gold&#8217; even more in future.</p>

<p>For those who want a little cultural variation in their culinary discovery programme, Caimari is the ideal starting point. A beautiful walking trail winds through the mountains for about 10 km before you reach the oldest and best-known monastery of the island, the Lluc Monastery.</p>
<p>In September, in particular, a visit to the saltworks of <strong>Es Trenc</strong> in southern Majorca is well worth the effort. Each year, 10,000 tonnes of salt are harvested here, with sea salt being ready for harvesting in autumn. A guided tour will tell visitors all there is to know about salt production. These coastal saltworks date back to the 6th century BC, when they were operated by the Phoenicians; today the famous &#8216;flor de sal&#8217; or &#8216;salt flower&#8217; is still manually harvested here.</p>

<p>After so many different culinary discoveries, the pieces of the puzzle will start to fit together, but the crowning glory is dinner, which conveys the greatest culinary impressions of the island. How fitting, then, that the <strong><a href="http://www.romantikhotels.com/Capdepera" target="_blank">Romantik Hotel Cases de Son Barbassa</a></strong> should present four evenings of perfect combinations of food and wine until the beginning of November. On this occasion, the cellar masters of some of Majorca&#8217;s best wine cellars will be presenting their wines. All this is taken place against the captivating panorama of Cala Mesquida Bay.</p>
<p>The Romantik Hotel Cases de Son Barbassa is located near the Natural de Llevant Park on the north-eastern side of Majorca on a 125,000 m² &#8220;finca&#8221; with almond, olive and baobab trees. Originally a defence structure from the 16th century, it now harmonically combines rustic and modern elements, surrounded by the aroma of wild roses and lavender. The restaurant&#8217;s menu is Mediterranean, with products either being home-grown or bought at the local market. The restaurant&#8217;s own olive oil with its intensive aroma plays a major role.</p>

<p>Alaró in the Tramuntana Mountains is known for its castle, which is located 500 metres above the town. The rule used to be: whoever owned this castle was lord of the island. It is still the symbol of freedom for Majorcans. The <strong><a href="http://www.romantikhotels.com/Alaro" target="_blank">Romantik Hotel S’Olivaret</a></strong> lies at the foot of this castle. The manor house dates back to the 15th century and owed its prosperity to its olive and carob trees for a long time. During the World Exhibition in 1888, the manor house received a gold medal for its olive oil. The guest rooms, most of which have their own terraces, are furnished with antiques. The restaurant has been named after the centuries-old tree in front of its main gate; its cuisine is modern, but based on traditional recipes.</p>
